Gluten Sensitivity is real only in USA, Canada, Mexico and some few other countries where all crops are GMO. It barely exist in countries like France where white wheat bread is daily consumed, or in Italy where wheat and spelt pasta or pizza are major food source for Italians rich and poor. Not the gluten is to blame but the gene modified gluten and other proteins modified by Monsanto. Countries like Canada, USA, Mexico do not know any other crops excepting the gene modified. The gene modified proteins are not recognized by our immune system and therefore on North American continent celiac and gluten sensitivity is real and affects more and more people.
